- 2 lbs ground beef
- 1 large onion, diced
- 4 garlic cloves, minced
- 2 cans (15 oz each) kidney beans, drained
- 1 can (28 oz) crushed tomatoes
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp smoked paprika
- 1 tsp oregano
- ½ tsp cayenne pepper (adjust to taste)
- 2 cups beef broth
- Salt and pepper to taste
- Toppings: shredded cheese, sour cream, green onions, jalapeños, cornbread
Instructions
- In a large pot over medium heat, brown ground beef with diced onion and garlic. Drain excess fat.
- Add chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper. Cook 1-2 minutes until fragrant.
- Stir in crushed tomatoes, kidney beans, and beef broth.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes, stirring occasionally, until thickened.
- Taste and adjust seasoning. Serve with your favorite toppings.
Notes
- For slow cooker: Brown beef first, then cook on low for 6-8 hours.
- Make it spicier with extra cayenne or chipotle peppers.
- This chili tastes even better the next day!
