Creamy Taco Ground Beef Soup

  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 packet taco seasoning (or homemade)
  • 4 cups beef broth
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 can (15 oz) black beans, drained
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • Toppings: tortilla strips, avocado, shredded cheese, cilantro, sour cream

Instructions

  1. In a large pot, brown ground beef with onion and garlic. Drain excess fat.
  2. Add taco seasoning and cook for 1 minute. Stir in beef broth, diced tomatoes, and black beans.
  3. Bring to a simmer and cook for 10 minutes.
  4. Reduce heat and stir in cream cheese and cheddar until fully melted and creamy.
  5. Serve hot with your favorite taco toppings.
