- 1 lb ground beef
- 1.5 cups corn (fresh, frozen, or canned — drained if using canned)
- 1 oz ranch seasoning (1 packet)
- 0.5 cup cream cheese
- 0.75 cup shredded cheddar
- 2 tbsp butter
- Salt and pepper, to taste
- 2 cups cooked pasta (optional: penne or rotini)
Instructions
- In a large skillet over medium heat, cook the ground beef until fully browned and no longer pink. Drain any excess grease.
- Add corn to the skillet and cook for 3–4 minutes until lightly browned and warmed through.
- Reduce heat to low. Stir in the butter, ranch seasoning, cream cheese, and shredded cheddar. Mix until everything melts together into a luscious, creamy sauce.
- If using cooked pasta, stir it in now and let everything cook together for about 3 more minutes, until hot and fully coated in that cheddar-ranch goodness.
Notes
- Use freshly shredded cheddar for better melting.
- If sauce gets too thick, add a splash of milk or pasta water.
