- 1 lb ground beef (lean or 80/20)
- 1 small head green cabbage, shredded (about 6–8 cups)
- 1 medium onion, sliced
- 2 carrots, julienned or thinly sliced
- 3 garlic cloves, minced
- 2 tbsp olive oil or butter
- 2 tbsp soy sauce or coconut aminos (for low-carb)
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon (about 5-6 minutes). Drain excess fat if needed.
- Add sliced onion, garlic, and carrots. Cook for 3-4 minutes until softened.
- Stir in tomato paste, smoked paprika, Italian seasoning, salt, and pepper.
- Add shredded cabbage and soy sauce. Stir well to combine.
- Cover and cook for 8-10 minutes, stirring occasionally, until cabbage is tender but still slightly crisp.
- Taste and adjust seasoning. Garnish with fresh parsley and serve hot!
Notes
- Add red pepper flakes for a spicy kick.
- Serve over cauliflower rice to keep it low-carb, or regular rice if you prefer.
- Leftovers store well in the fridge for up to 3 days.
