- 1.5 lbs ground beef
- ½ cup breadcrumbs
- 1 egg
- ¼ cup ketchup + 2 tbsp for glaze
- 1 small onion, finely grated
- 1 tsp garlic powder
- 1 tsp Worcestershire sauce
- 4 medium potatoes, cut into wedges
- 2 cups baby carrots
- 2 cups broccoli florets
- 2 tbsp olive oil
- Salt, pepper, and dried herbs
Instructions
- Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
- Mix ground beef, breadcrumbs, egg, ¼ cup ketchup, onion, garlic powder, Worcestershire, salt, and pepper. Form into 8 small oval meatloaves.
- Toss potatoes, carrots, and broccoli with olive oil, salt, pepper, and herbs. Arrange vegetables around the meatloaves on the sheet pan.
- Brush meatloaves with remaining ketchup. Bake 25-30 minutes until meatloaves reach 160°F internally and veggies are tender and golden.
Notes
- Use lean ground beef or a beef/pork mix for extra flavor.
- Add BBQ sauce instead of ketchup for a smoky twist.
- Great for meal prep — leftovers reheat well.
